Remove the spring roll wrappers from the freezer. These will take about 45 minutes to 60 minutes to thaw! Place them on a large plate covered with a damp cloth, otherwise the sheets will dry out.

Chopping the ingredients

Then you finely chop the leek, bean sprouts and garlic. It is best to cut the leek lengthwise through the middle and then again lengthwise through the middle. The flat side of the leek on the plank and the 'convex side' above.
In the meantime, cook the noodles according to the instructions on the package. I used 1 portion/slice of the noodles from a 250 gram bag. Drain the leek in a colander, rinse with cold water and drain well. Then you cut the noodles finely with scissors or you can of course also cut them.

Filling

You put the marinated chicken in the pan and add a little pepper. When it is done, you can chop it even more and put it back in the pan. Now you can add the vegetables. Use a slightly larger pan, because there will also be noodles! Make sure that the heat is not too high, otherwise it will become dry quickly.
Stir everything together and sprinkle crumbled stock cubes over the mixture.

NB: it must taste a bit salty, because after frying a lot of salt is absorbed into the spring roll wrappers, causing the filling to quickly become bland in taste.

You have to look carefully at what the mixture looks like. It's okay if it looks a bit yellowish.
I also added some soy sauce, but this is not absolutely necessary.
Now add the noodles and stir well. Keep tasting!

Roll spring rolls

We can now fill and roll the thawed spring roll wrappers. Place a bowl with egg and a brush. Then you remove the first spring roll wrapper from the stack. The skins can take some wear, so you can pull on them a little. Place the sheet with the point towards you and then place 2 to 3 spoons of filling on it, as shown in the photo. You should leave some space on the sides. Roll the tip over the filling and press firmly. Try to make a roll with your hands.

Brush the points well with egg and fold them inwards. Make sure that this is done tightly and the points are well lubricated so that it sticks well. If this does not happen and there is a hole in the spring roll, too much fat will get into the spring roll during frying. Better not!
You continue to roll up the spring roll, brush it again with egg and close it well. And voilà, a beautiful spring roll!

It is now also time to preheat the deep fryer, oven or air fryer. Please use the following:

Deep fryer: 180 to 200 degrees – 5 to 6 minutes
Oven: 220 degrees – 20 minutes
Airfryer: 180 degrees – about 10 minutes

I made about 12 pieces from the ingredients provided, because I wanted to see if it was possible to make it yourself. And yes, it is easy to do! At some point you get a hold of it and the spring rolls are made in no time. Actually, chopping the vegetables and baking them is the most work.

We can now start frying the spring rolls. This can be done with a deep fryer, oven or air fryer. We use the following degrees and times for frying, oven or air fryer:

Deep fryer: 180 to 200 degrees – 5 to 6 minutes
Oven: 220 degrees – 20 minutes
Airfryer: 180 degrees – about 10 minutes

With all preparations, they must be cooked until they turn brown! If you are going to fry, you should let the spring rolls drain well on a piece of paper, because they will contain a lot of oil.
Fresh spring rolls are the tastiest, but you can also freeze them! You freeze the spring rolls unbaked. If the spring rolls are frozen, you need to fry or bake them a little longer.
