Recipe for healthy gingerbread cookies
This is what you need for approximately 42 medium or 60 small healthy gingerbread nuts:

  • 1 pack of Koopmans self-raising almond baking flour
  • 50 g oat flour
  • 50 g pecan nuts
  • 2 cloves, crushed
  • 1 tablespoon cookie and gingerbread spices
  • 1 tablespoon of cinnamon
  • 1 tablespoon cocoa (for color)
  • 1 bag of vanilla sugar (8 grams)
  • ½ space
  • 2 tablespoons of honey
  • 1 tablespoon of milk
  • pinch of salt
  • 50 g butter

This is how you make it:
Grind the pecan nuts with a mortar or in a food processor.

Mix the self-raising almond baking flour, oat flour with the chopped nuts, cloves, cookie and gingerbread spices, honey, cinnamon, cocoa, salt and vanilla sugar.

Melt the butter in a pan or in the microwave. Add this to the flour together with the milk. Add the banana and knead it into a nice dough.

Make balls from the dough, place them on a baking tray and press them slightly. Spread each gingerbread nut with a little bit of milk.

Bake the gingerbread nuts for 15-20 minutes at 160 degrees.

Healthy gingerbread cookies
If you have started baking gingerbread nuts, you might as well also bake these gingerbread cookies.

This is what you need for 8 healthy gingerbread cookies:

  • 60 g almond flour
  • 40 g oatmeal
  • 80 g oat flour
  • 40 g pecan nuts, finely chopped
  • 1 bag of vanilla sugar (8 grams)
  • 1 tablespoon of cinnamon
  • 1 tablespoon cookie and gingerbread spices
  • 2 tablespoons of milk
  • 45 g butter, melted
  • 2 tablespoons of honey

This is how you make it:
Mix the flour, vanilla sugar, nuts, cinnamon, salt and gingerbread spices
Melt the butter and add it to the flour together with the milk and honey.
Roll the dough into a slab of 3-4 mm thick and make cookies from it.
Bake the cookies in the oven for about 20 to 25 minutes.

  • 1 egg, beaten, for brushing
  • 2 tablespoons almond shavings
  • Baking paper

This is how you make it:
Preheat the oven to 160 degrees.

Mix the ingredients for the food together, form it into a ball and place it in the oven
refrigerator.
Mix all the ingredients of the cake together and divide the mixture in half.

Pour one half of the batter into the springform pan. Then put the spice in it
center, make sure you leave 1 cm on the outer edge where you do not spread food.
And then add the second half of the cookie batter.

Finally, sprinkle the almond shavings over it and brush it all with egg. Bin
the cake for 40 minutes.
